Grain-Free Cinnamon Apple Pancakes

Pancakes are one of my favorite breakfasts. Since becoming a mother I have found that I don’t have as much time as I once did to devote to making fun breakfasts.

I understand that pancakes don’t take a ton of effort, but they often take more than what a new mom has got to give.

I somewhat recently discovered that Costco carries the Birch Benders pancake mix! This was a magical discovery because all you have to do with these mixes is add water, let sit for a few minutes and fry them up!

I currently have and used the Birch Benders Keto mix for this recipe. I did not by the keto mix because it was keto, but because it was the mix available at the time. My main reason for using BB is because it’s grain free and has real healthful ingredients.

If you are like me, you like to get creative with your recipes and incorporate different things from around the kitchen that may be on their way out. Well, this morning my apples were in need of behind eaten so they were the lucky pick.

If you wanted to get even more creative you could shred and apple up and put it in the pancakes as well as on top! I chose to dice and fry up my apples so they could be used as a topping.

Ingredients & Directions:


1 C. Diced apple

2/3 C. Birch Benders Pancake Mix

1/2 C. Water

Cinnamon

Avocado oil

1. Chop up your apple and put it in the pan with some avocado oil and cinnamon. (I chose to use avocado oil, but butter or some other oil would also work.)

2. Prepare your pancake mix. (This recipe would obviously also work with any pancake mix that you like to use or have on hand)

3. Cook pancakes according to package or recipe directions.

4. Once your apples are cooked to your liking remove them from the heat and top your cakes with them 😛

This recipe is also great topped with caramel, maple syrup, or peanut butter! Maybe all three 🤷‍♀️😉
