Gluten-Free Brown Sugar Banana Bars

Bananas seem to be one of those foods that you either love or hate. I personally have a changing relationship with bananas. Sometimes I can not get enough of them and other times I want nothing to do with them. In my current pregnant state, I have been keeping a steady stock.

Like them or not, bananas are a great health food. Sitting at about 100 calories a piece bananas, are a great low-calorie snack offering a decent amount of fiber and potassium. It is no secret the wonders that fiber can work in the body, but potassium is a health superstar too! Potassium helps maintain fluid and electrolyte balance and a steady heartbeat. Too little potassium in the body can lead to weakness, lethargy, and muscle cramps. Bananas also contain fructoogliosaccharides (FOS), which are non-digestible carbohydrates that occur naturally in several different plants and are thought to be prebiotics (food for probiotics (bacteria)) that provide food for the good bacteria in the gut microbiome. Since FOS promote the growth of good bacteria and can help protect against bad bacteria, bananas have been recommended as a digestive upset (things like diarrhea) remedy.

Due to the use of brown sugar in the bars and the frosting, this recipe is not one that would be considered low in sugar or sweetness. While these bars are delicious you may find that a bite or two is all you can handle. I like to cut mine into small bite-sized pieces that offer the perfect amount of sweetness and surprise of banana.

I was so pleased when I attempted to make these GF and they turned out great! I used Namaste Organic All-Purpose Gluten-Free Flour.
