Rice-Oat Cherry Peanut Butter Bars

Breakfast. Snack time. Dessert. You name it! These bars are best enjoyed during any time of the day! They are the perfect mix of sweet, salty, and tangy!

Bar Highlights:

    • Agave nectar has a lower GI (glycemic index) value and has less of an impact on blood sugar levels due to a slower breakdown and release.

    • These bars can be enjoyed at home, but they also make great snacks for those on the go
  • Antioxidants
    • Cherries are a great protective food as they contain antioxidants and other anti-inflammatory compounds

Recipe:

  • 2 C. Rolled oats
  • 2 C. Puffy brown rice cereal
  • 1/2 C. Dried cherries, cut into pieces
  • 1 C. Unsweetened creamy peanut butter (no-stir works best)
  • 1 C. Agave nectar
  • 1/2 tsp. Vanilla extract

Directions:

  • In a medium-sized bowl, combine the oats, cereal, and cherries and stir until well combined
  • In a small sauce pan, over medium heat, combine the peanut butter, agave nectar, and vanilla extract and heat until the mixture becomes thin enough to mix well. Stir frequently.
  • Remove the mixture from heat
  • Combine the peanut butter and agave mixture with the dry ingredients and mix until everything is combined
  • Line an 8×8 pan with parchment paper
  • Pour the mixture into the pan and press down
  • Cover and chill for at least 30 minutes
  • Cut into desired bar size and enjoy!
  • I like to store my bars in the fridge so they remain sturdy and less messy

Another great thing about these bars is that they are relatively inexpensive to make! Nothing beats a enjoyable, filling and cost-effective snack!
