Baking! Eating! Decorating! Gift wrapping! Christmas music! The holiday season is one of my favorite times of the year. Baking is a year-round activity for me, but there is something extra special and fun about baking during Christmas time!
Cookies are one of my all time favorite things to make, and the baking possibilities that come with Christmas are endless! Gluten-free cookies if done right can be just as good or better than their gluten-filled counterparts! One of the biggest tricks is to make sure the cookies do not become over-cooked! Letting the cookies sit on the hot baking sheet for 1-2 minutes after removal from the oven will allow for the heat inside and around the cookies to continue baking them without burning or making them too crisp!
Whether you are looking for a recipe that will make enough for a party, or one that will provide snacking treats and after dinner delights this one will not disappoint!
Preheat the oven to 400 degrees Fahrenheit
For the Cookie Dough:
- 1 C. unsalted butter (2 sticks), softened
- 1 1/3 C. white sugar
- 2 large eggs
- 2 tsp. vanilla extract
- 2 3/4 C. all-purpose gluten-free flour blend (I use Namaste Organic Perfect Flour Blend)
- 1 1/2 tsp. ground cinnamon
- 1 1/2 tsp. cream of tartar
- 1 tsp. baking soda
- 1/4 tsp. salt
Cinnamon & Sugar Rolling Mixture:
- 2 1/2 Tbsp. white sugar
- 1 Tbsp. ground cinnamon
Baking Directions:
- Line a baking sheet with parchment paper (you could also lightly grease the pan if parchment paper is not available).
- In a large bowl, mix the sugar, vanilla, and butter until creamy. Add the eggs one at a time, beating after each addition.
- Add the dry ingredients into the wet mixture and mix until combined.
- In a separate bowl, mix together the cinnamon and sugar for rolling.
- Roll roughly tablespoon-sized balls of dough in hand and roll in the cinnamon & sugar mixture.
- Place cookies on sheet about 1 1/2 – 2 inches apart.
- Bake for 10-11 minutes.
- Remove the pan from the oven and allow the cookies to sit on the sheet for 1-2 minutes.
- Transfer the cookies from the pan to a cooling rack.
- Enjoy!
