Maple! Apple! Cinnamon! These muffins are the perfect fall treat! I am someone who cannot eat gluten and does better if I stay away from lactose. BUT these muffins turn out just as wonderful when they are made “normal”!
I often have a hard time making gluten free baked goods that don’t turn out very dense and almost raw in the center (especially loaves). I have found that gluten free muffins bake much better than a loaf. you don’t end up with an overcooked outside and raw inside. I have tweaked this recipe quite a bit and have achieved a final product that is SO good. The consistency, in my opinion is really not much different than a gluten-containing muffin.
Don’t let the extravagant list of ingredients and steps keep you from trying this recipe! The longest part is the peeling and dicing of the apples!
Muffins
- 2 C. All purpose flour (I use Namaste Organic Perfect Flour Blend)
- 1 C. White sugar
- 1 Tsp. Baking powder
- 1/2 Tsp. Salt
- 1/2 Tsp. Ground Cinnamon
- 2 Large Eggs
- 1/2 C. Melted butter ( I use Organic Valley Unsalted Cultured Butter because it has less lactose)
- 1 1/4 Tsp. Maple (or vanilla) extract
- 1 1/2 C. Peeled and chopped tart apples
Streusel Topping
- 1/3 C. Packed brown sugar
- 1 Tbsp. All purpose flour
- 1/8 Tsp. Ground cinnamon
- 1 Tbsp. Cold butter
Glaze
- 3/4 C. Powdered sugar
- 2-3 Tsp. milk (I use Organic Valley Lactose Free 1%) or apple juice
- 1 Tbsp. Melted butter
- 1/4 Tsp. Pure maple extract (Vanilla works too!)
Directions
- Preheat oven to 375 degrees Fahrenheit
- Grease muffin tins
- Bake for 15-20 Minutes
- For the muffins:
- Mix the dry ingredients (flour, powder, and salt) together and set aside
- Mix the melted butter, white sugar and vanilla or maple extract together
- Add eggs one at a time
- Slowly add in the dry mixture until well mixed
- Fold in apples
- Fill muffin tins about 3/4 of the way
- For the Streusel:
- Combine all of the dry ingredients together
- Cut in the butter until you get a crumbly mixture
- Top muffin batter with streusel
- For the Glaze
- Mix all ingredients together in a bowl
- Add milk or apple juice until desired consistency is achieved
- Once the muffins have cooled completely drizzle the glaze over the top
Makes about 12 muffins.
